Ingredient Spotlight | Butterfly Pea
Butterfly Pea (in Thai: ดอกอัญชัน) is an amazing herb native to tropical Asia - including Thailand. This vibrant flower has been used as a natural food & drink colouring for years across Southeast Asia. In traditional Thai cooking, the pretty flower is squeezed for their luminous blue colouring which is typically added to coconut milk (or other bases) to create bright, fun indigo coloured desserts. A popular drink called ‘Nam dok anchan’ is a brightly coloured drink made with Butterfly Pea that can served hot or cold. It's commonly mixed with honey and lemon (sometimes a sugar syrup for sweetness), but can be mixed with other flavours like mint, cinnamon, passion fruit and ginger.
Thai people also take these flowers and dip them into a batter and then fry them. This makes for a a crispy, tasty snack - beats potato chips any day in our books!
But interestingly enough, Butterfly Pea as a flower doesn't possess a strong scent. When it's used in cooking, as a tea or when it has its oil extracted for products, this is when get the amazing (but still mild) woodsy, earthy smell.
But it's not just a pretty flower.
